Our History

Our Story

Ryan Hill is our brew master. He has been home brewing since 2003 and immediately began focusing on making beer that doesn’t taste like homebrew but tastes like something you would find in the nicest bars and breweries. He has grown up and currently lives less than 10 minutes from the brewery and he has two sons who play lacrosse. When the pandemic started in 2020 he converted his garage into a bar and opened his taps to his neighbors and friends.
 
Tommy Evans is the founder of Silly Yak Beer Company and started Two Story Chimney Ciderworks in 2019 with his son who plays lacrosse with Ryan’s boys. He previously worked at other breweries and was impressed with the beers Ryan was serving from his homemade bar on his homebrew setup. That started the two of them joking about opening a brewery and a few years later Silly Yak Beer started to take form.

The BREWERY

There was already a gluten free facility built for Two Story Chimney Ciderworks, so adding a dedicated gluten free brewery was an easy next step. We partner with the cidery to share both production space and the tasting room. We grow our own hops and our own corn; the other ingredients we get from Grouse Malt House which is a gluten free malt house in Colorado. Our brewmaster has developed over a dozen recipes for different styles of beer that have been meticulously converted to blends of GF ingredients.

MISSION STATEMENT

Having a cidery previously has introduced and connected us to a large gluten free population with limited options for good food and drink. We have and will continue to create different high quality beers that will be gluten free and taste true to their style.
